Park Hyatt Sydney is one of my favourite hotels in the city, having visited on my recent month-long journey around Australia. I love its prime position on the harbour, looking directly across the water to Sydney Opera House and Harbour Bridge. The rooftop pool and spa is my favourite feature – it’s the perfect escape after a day of exploring. I recommend taking one of the private day-bed cabanas that line the pool, ordering a refreshing cocktail and watching the gentle activity of the harbour.
